Russian Sandwich Recipes

Here are some interesting taste combinations that can be found as typical sandwiches in daily Russian life.

RUSSIAN EGG AND OLIVE SANDWICH

4 Eggs - hard boiled.
2 tablespoons chopped olives
2 tablespoons chopped pimientos
Olive Oil
Vinegar
Butter
Salt and Pepper (to taste)
½ cup onion, finely chopped (optional)

Chop eggs then, add two tablespoons of chopped olives, chopped pimientos and onion (optional). Season with salt and pepper to taste. Next, moisten with olive oil and vinegar (or Neuchatel cheese). Spread between thin slices of dark buttered bread.


RUSSIAN LUNCH SANDWICH

Brown bread, 4 slices
1 ½ cup cooked vegetables, chopped
3 tablespoons cream
2 teaspoons cottage cheese
2 tablespoons carrot, grated
1 teaspoon Dijon mustard
½ teaspoon sugar
Salt and Pepper, to taste

Combine vegetables, cream, cottage cheese, Dijon and sugar. Mix well then, add in grated carrot and season to taste. Spread on brown bread. You may also want to warm this sandwich in a skillet or Panini grill.


RUSSIAN TURKEY AND BACON SANDWICH
8 slices pumpernickel bread
8 ounces sliced smoked turkey breast
8 slices bacon
1/2 cup sliced almonds
1/2 cup mayonnaise
2 tablespoons ketchup
Lettuce (optional)
Tomato (optional)


Preheat oven to 350. Arrange almonds on a cookie sheet and toast for 5 minutes.
Mix mayonnaise and ketchup together.
Toast Pumpernickel bread.
Spread mayonnaise mixture on the toasted bread.
Layer turkey then, bacon. Top with toasted almonds and close the sandwich.


RUSSIAN BLACK SANDWICH
Black bread
Garlic cloves
Olive Oil
Cheese (your choice)
Pickles (sweet gherkins work well), chopped
Ham slices (substitute with smoked fish or sausage)
Cucumber, chopped
2 tablespoons mayonnaise

Fry black bread in a skillet with a teaspoon of olive oil. Remove from skillet and let rest on paper towels to gather any excess oil.

Partially crush the garlic cloves and rub liberally on the inside of both slices of black bread.

Combine pickles, cucumber and mayonnaise - mix well. Spread mayonnaise mixture over inside of both bread slices (one side only on each).

Layer meat and cheese. Top sandwich and enjoy.


RUSSIAN BACON HORSERADISH SANDWICH
4 slices Bread (Pumpernickel or Rye)
2 tablespoons butter
8 slices bacon, cooked
4 slices cheese Swiss or Cheddar)
¼ cup horseradish sauce
3 tablespoons mayonnaise
½ cup Green olives, chopped
1 cup Roasted Red Bell Pepper, chopped (you may also use canned/jarred)

Spread butter on one side of each slice of bread.
Layer four slices of bacon over one of the buttered sides.
Mix mayonnaise and horseradish sauce and spread onto the bacon slices.
Top with cheese slices and chopped olives and roasted bell pepper.
Top and ENJOY!!!!
