Burrito with Enchilada Sauce Recipe


If you need a quick and easy meal, this Burrito with Enchilada Sauce can be cooked in the microwave. From getting ingredients out, preparation, cooking, and serving, this meal takes about twenty minutes to make. It is a versatile meal, too, since each burrito can be made to the individual specifications of the diner. Filled with meat or made for a vegetarian diet, this burrito is a winner!

Here are instructions for an individual burrito. It is a tasty recipe that can be made from ingredients from your cupboard. This is perfect for when you are away at college and donít want a lot of leftovers. It also works well for those who want to fix a quick dinner for one.


Burrito with Enchilada Sauce Recipe


Ingredients:

1 flour tortilla
1/3-1/2 cup of refried beans (I use LaTiara Mexican Style Refried Beans.)
2 tablespoons of sharp cheddar cheese
2 tablespoons of chopped onion
Additional fillings, if desired (green chilies, jalapenos, meat, corn bean salad)
1/4-1/2 cup enchilada sauce (I use Old El Paso.)
2 tablespoons or more of shredded cheese for topping

You may want sour cream, guacamole, shredded lettuce, salsa, and chopped tomatoes, if desired, for topping the burrito after baking.


Method:

On a plate, lay the flour tortilla flat and spread the refried beans on it. Sprinkle the onions and cheese evenly over the beans. Roll the tortilla up into a burrito. Cut the burrito in half and place both halves into a microwave safe bowl. Spoon the enchilada sauce over the burrito halves. Sprinkle cheese on top of the enchilada sauce. Cover the bowl with a microwave safe plate. Cook on high in your microwave for 2 Ĺ to 3 minutes. Let the bowl stand, covered, for 10 minutes. Carefully remove the plate from the bowl. Add your desired toppings.

You can serve it as a side dish with your burrito, too. The corn bean salad also makes a tasty topping for lettuce salads to serve with your sandwich meals.

Making this Burrito with Enchilada Sauce is easier than going to a Mexican restaurant for dinner. It is a frugal meal with low-cost ingredients. If you want to save time, make more burritos and freeze them in foil. Make individual portions of the enchilada sauce and pour it into sandwich baggies. Freeze them along with the burritos. When you are ready for a quick meal, thaw the burrito and enchilada sauce and assemble them in the bowl. Cover and microwave as usual!
