Cheezy Chicken Avocado Sandwich Let's take a moment to discuss the elephant in the room - avocadoes. Though a high-fat content food, avocadoes are high in the type of fat that is primarily monounsaturated. They also contain a high concentration of dietary fiber, vitamins and potassium. As with most any food, avocado should be used in gentle moderation. For flavor and texture, avocado is a creamy, rich treasure that will have your meal guests coming back for seconds. Marinade 1 c. orange juice 1/3 c. lemon juice 1/4 c. oil 1/4 c. teriyaki 1 1/2 tsp. lemon pepper Sandwich Fixins 6 French rolls, split 1 stick butter, melted and held separately Curly leaf lettuce as needed 1 red onion, thinly thinly sliced 6 boneless chicken breasts, skinned and grilled 4 fresh Avocados, seeded, peeled and thinly sliced 1 tomato thinly sliced or grated 1 ½ Cups salsa Instructions Combine marinade ingredients in glass 9 x 13 inch dish. Lightly score the raw chicken breasts with diagonal lines to help disburse the marinade flavor throughout more of the chicken breastmeat. Reserve 1/4 of prepared marinade to use in the final minutes of grilling the chicken breaqsts. Place chicken breasts in the remainder of the marinade - turning several times to coat. Cover and refrigerate for 4-6 hours. Drain chicken breasts when marinade time is done. When ready to grill, place chicken 8 inches from coals. Cook 8-10 minutes turning once. When chicken is cooked let sit on a plate for 8 minutes before slicing for sandwiches. Next, toast the bread, brush melted butter on one side of each bread slice. Place on grill, butter side down, and grill until lightly toasted. Place 1 tomato slice, 2 avocado slices and cheese on one toasted bread side and grill 2-5 minutes more until cheese melts. Center slices of grilled chicken breast between grilled ingredients and close the sandwich. For added zing - try a dash of paprika inside this luscious sandwich or a slice of your favorite pickled banana or jalapeno pepper!
