Mariposa Ranch Texas Ranger Baked Eggs Recipe

Texas Ranger Baked Eggs – Johnna Chamberlain, Mariposa Ranch
Serves 12

7 eggs
1-cup milk
2 tsp. Sugar
4 ozs cream cheese, cut into small pieces
1 lb small curd cottage cheese
2 cups Monterey Jack cheese
¼ cup chopped green bell pepper
2/3 cup butter or margarine, melted
½ cup flour
1 tsp. Baking powder
Dash paprika
Dash ground mustard

The night before: Beat eggs, milk, and sugar together. Add remaining ingredients and mix well. Spray a 3-quart baking dish and pour mixture in. Cover and refrigerate overnight.
Bake at 350 for 50-60 minutes or until a knife comes out clean when inserted.

Peach Muffins – Johnna Chamberlain, Mariposa Ranch
Makes 10 muffins
Johnna says the peach preserves keep these muffins moist and tender.

1-¾ cups sifted all-purpose flour
½ cup sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ cup sour cream
½ cup peach preserves
1 egg
1 tsp. vanilla extract
2/3 cup chopped pecans, toasted

Position rack in center of oven and preheat to 400F. Line 10 muffin cups with muffin papers.

Sift first 5 ingredients into large bowl. Whisk sour cream, preserves, egg and vanilla to blend in medium bowl. Add sour cream mixture and pecans to dry ingredients and stir just until combined; do not over mix.

Divide batter among muffin cups. Bake until tester inserted into center of muffins comes out clean, about 20 minutes. Cool 15 minutes before serving.
