Mexico Information

Baked Stacked Quesadillas with Chorizo star
Whenever I travel in Mexico, I am always in pursuit of the "perfect antojito"/snack. However, it was in my own house that I discovered the "ultimate perfect antojito." I call them "Baked Stacked Quesadillas with Chorizo." They are the best "pizza" that my wife, Maria, has ever eaten!

Burritos with Multi-Colored Rajas, Ham, and Cheese star
By adding turkey ham and colorful sweet bell peppers to the traditional burrito filled with rajas/strips of poblano chiles and cheese, a delicious antojito can be transformed into an even more delicious one. If you do not believe me, just ask "traditional" Maria.

Chunky Guacamole Tostadas star
According to Maria, my wife, Mexicans top off their tostadas with "EVERYTHING." One of our favorite toppings on this extremely popular and common antojito/snack is guacamole. Instead of the blended, smoother version, we prefer on our tostadas a well-textured, chunky guacamole.

Connitas Mexican Torta Recipe star
Teleras are Mexican sandwiches that are made using either teleras or bolillos as the bread. So far, my favorite "untraditional" telera that I make is one filled with potatoes, eggs, cheese, jalapenos and herbs. These sandwiches, er, I mean teleras are a delicious and satisfying meal unto themselves.

Fish Tortas with Chipotle Lime Mayonnaise Recipe star
Fish tacos seem to get all of the press, publicity and accolades. Yet, fish tortas/sandwiches can be just as delicious and even more filling. Here is a sauteed fish torta recipe that is spiced up with a slightly hot, smoky and tangy chipotle lime mayonnaise.

Imitation Crab Salad with Chipotle Dressing Recipe star
Imitation Crabmeat is not a traditional Mexican ingredient. However, when it is combined with chipotle chili, tomatoes, corn, lime, bell pepper, apple cider vinegar and cilantro, it is the makings for a healthy, nutritious, inexpensive, smoky, flavorful, delicious and colorful Mexican salad.

Mexican Lentils with Rice and Vegetables Recipe star
Here is a recipe for a healthy, nutritious and delicious vegetarian lentil preparation that has traditional yet, also, original Mexican flare with the addition of rice, serrano chile, tomatoes and cilantro. No matter how often you eat it, it's a dish that is really hard to get "sick of."

Papas con Huevos y Chorizo Recipe star
Mexican cookery throughout its regions is justifiably famous for many delicious yet complex and time-consuming culinary creations. However, not all of Mexico's dishes are so involved but can be, arguably, as delicious. Papas con Huevos y Chorizo is one such very simple yet satisfying meal.

Rustic Dried Shrimp Soup with Vegetables Recipe star
Delicious dried shrimp are available in markets throughout most of Mexico. One of these crustacean's most common uses is in Caldo de Cameron Seco/Dried Shrimp Soup. Although it is one of the country's traditional soups, it seems like every cook has their own interpretation of it. Here is mine!

Untraditional Mexican Fried Rice Recipe star
"Traditional" Mexican rice is a staple in our household. However, by incorprating additional ingredients into it and by frying it a second time, I have created a nutritious, flavorful, colorful, simple yet multi-textured dish that I call "Untraditional Mexican Fried Rice."

Verdolagas with Crispy Pork star
One of my health conscious wife's "top of the list" vegetables is verdolaga. Also known as purslane and pigweed, this flowering dark green leaf vegetable is healthy and nutritious. One of Maria's favorite ways of preparing it is in a dish that she calls "Verdolagas with Crispy Pork."
