In fact, slow cookers are still one of the best appliances out there, and are still a timesaving option for everyone. Even though some recipes take a long time to cook, the prep is generally quick, and since slow cookers cook unattended, it is the best choice for working cooks or even for cooking overnight. If you’re looking for an easy brunch dish that cooks overnight, this Slow Cooker Breakfast Hash will be one you’ll want to cook. It is not only easy to put together, but it cooks overnight so that it’s done in time for morning family or guests.

Hash is one of those comfort foods that originated to use the leftover potatoes and meat from Sunday dinner. It has expanded over the years, and is a very good dish to serve for brunch or supper. You can use ham according to the recipe, or substitute cooked breakfast sausage, crisp bacon, corned beef, roast beef, or cooked Mexican chorizo. Leftovers can be sautéed in butter and topped with a fried egg. Because it gets a little too brown around the edges when I cook it over 7 hours, I put the slow cooker on a timer (the kind we use on our Christmas decorations) and have it start exactly six hours before I want to serve; it works perfectly.

1 pound lean ham, diced
2 cups shredded cheddar jack cheese
2 pounds Frozen Southern Style Hash Browns
1 large onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1/2 cup milk
10 eggs
1 teaspoon salt
1/2 teaspoon pepper

  1. Spray a 4-6 quart slow cooker with non-stick spray.
  2. Mix the ham, cheese, hash browns, onions and bell peppers; spread evenly in the slow cooker.
  3. Mix the milk, eggs, salt, and pepper; pour over the hash brown mixture.
  4. Cover the slow cooker, set to low, and let cook 6-8 hours or until the edges begin to get crisp. Remove the lid to let any extra moisture evaporate.
