Christmas Brunch Wreath Recipe
Brunch dishes are always welcome, especially during the holidays. This Christmas Brunch Bake has everything: biscuits, festive red and green peppers, fluffy eggs, crisp bacon, and cheese. It can be made ahead, and is baked in a Bundt® pan so it resembles a wreath. You can garnish it with poinsettias, holly, or a big Christmas bow. This beautiful wreath can be wrapped well in foil and frozen; it can be gently reheated for the special day.

Filling:
1 pound bacon, chopped

12 eggs
1 cup milk
1 teaspoon salt
1 teaspoon freshly ground black pepper, (or to taste)

1 red bell pepper, diced
1 green bell pepper, diced
1/2 medium onion, finely chopped
2 3/4 cups shredded cheddar cheese, divided

Biscuit Dough:
3 cups self-rising flour
2 1/2 - 3 cups heavy whipping cream

2 tablespoons melted butter

  1. Preheat oven to 425°; spray a standard (12-cup) Bundt® pan generously with non-stick spray.
  2. Cook the bacon in a skillet, stirring often, until crisp; remove from the pan and pour off all but 1 tablespoon of the bacon fat.
  3. Whisk together the eggs, milk, salt, and pepper; add the mixture to the skillet and cook over medium heat, pushing the solids to the center, until about halfway cooked - it will still look like there is a lot of liquid and this is as it should be since the mixture will continue cooking during baking and will eliminate a rubbery texture to the eggs.
  4. Stir in the red and green peppers, onions, and all except 1/2 cup bacon. Set aside.
  5. Biscuit Dough: Mix the self-rising flour, heavy whipping cream, 1/2 cup cheddar cheese, and reserved 1/2 cup cooked bacon; mix until moistened.
  6. Sprinkle 1/4 cup cheese over the bottom of the Bundt® pan.
  7. Divide the biscuit dough into thirds; break pieces of a third of the dough and place in the pan; top with 1/2 of the egg mixture and sprinkle with 1 cup of the remaining cheese.
  8. Place another third of the dough over the cheese, the remaining egg mixture, then the remaining cheese.
  9. Top with the remaining dough, then press down a little to even out.
  10. Bake 30 minutes, cover loosely with a piece of foil to prevent over-browning, and turn the oven temperature down to 350°. Bake an additional 30 minutes.
  11. Remove from the oven, let sit 10 minutes, then invert onto a serving platter. Brush with the melted butter, garnish, and serve.
