Patriotic Brookies Recipe
“Brookies” is a word coined by a clever baker out there who baked a mixture of brownies on the bottom with a cookie layer on top. Most brookies are baked in two layers, and most are scrumptious. The following is a shortcut method of making Brookies by using two homemade mixes that are easy to make and, if you are one who likes to save time, should already be on your pantry shelf. Patriotic Brookies are perfect for serving at any patriotic holiday gathering, including Armed Forces Day, Memorial Day, Flag Day, Independence Day, and Veterans Day. Red, white, and blue M&Ms begin showing up in stores like Target, Sam’s Club, etc. around Memorial Day; I always purchase a big container because they keep well and are perfect for making cookies and snack mixes.

Once the mixes are made, a pan of brookies is just a few minutes away with a minimum of hands-on time.

48 Bars or Squares

Brownie Layer:
4 cups Mom’s Brownie Mix
Mom's Brownie Mix
4 eggs
2 cups finely grated zucchini, or yellow squash
1 tablespoon vanilla

Cookie Layer:
4 1/2 cups Basic Sugar Cookie Mix
Basic Sugar Cookie Mix
3 eggs
1 8 oz. package softened cream cheese
1 teaspoon vanilla
3 cups red, white, and blue M & M's Candies


  1. Preheat oven to 350°.
  2. Spray an 11" x 17" jellyroll pan with non-stick spray, line it with parchment, and spray the parchment.
  3. Brownie Layer: Mix the brownie mix, eggs, zucchini, and vanilla until fairly smooth.
  4. Spread over the bottom of the prepared pan.
  5. Cookie Layer: Mix the sugar cookie mix, eggs, cream cheese, and vanilla until smooth.
  6. Stir in 2 cups of M&Ms.
  7. Drop dollops of the mixture over the surface of the brownies.
  8. Sprinkle the top with the remaining M&Ms.
  9. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool thoroughly before cutting into 48 squares or bars.
