Cheesy, Garlicky Spinach Bake Recipe
Spinach is cheaper when bought in bulk, and since it’s extremely healthy and versatile, I always purchase it in a 3 pound bag which means there is a lot of spinach around. It’s perfect for salads, as an ingredient in fillings for pasta, in spinach dip, and as a crisp vegetable as a base for grilled or baked meats. My favorite way, however, is this Cheesy, Garlicky Spinach Bake which I discovered when trying to use up a carton of cottage cheese that had an expiration date fast approaching. Now I purchase large cartons of cottage cheese so I can make this often.

1 tablespoon butter
1 clove garlic, finely minced
1 medium onion, finely chopped
1 pound fresh spinach

1/2 cup cottage cheese
1 egg
1/4 teaspoon salt
1 cup grated cheddar cheese

1/4 teaspoon dry bread crumbs
1 clove garlic, finely minced

  1. Preheat oven to 350°.
  2. Spray a 1-quart shallow oval casserole dish with non-stick spray.
  3. Heat the butter in a large skillet; add the onion and sauté over medium heat until softened.
  4. Add the garlic and spinach, stir until the spinach is wilted; turn off the heat.
  5. In a separate bowl, mix the cottage cheese, egg, salt, and cheddar cheese; add to the spinach mixture and transfer to the prepared baking dish.
  6. Toss the bread crumbs with the garlic and sprinkle evenly over the spinach mixture.
  7. Bake 30-40 minutes or until bubbly.
