Quickie Tortilla Pizza Recipe
Flour tortillas have many uses: they are often used in sandwich wraps, tacos, burritos, enchiladas (although they tend to get a bit soggy as opposed to corn tortillas), quesadillas, etc. My friend, Claudia, recently told me about a quick and easy pizza she makes often using a whole wheat flour tortilla as the crust. ””
When I tried her version, I found that it turned out very crisp – a crust made in heaven, in fact (white tortillas don’t go as crisp so make sure you purchase the whole wheat version). These Quickie Tortilla Pizzas can be made with either bottled Alfredo sauce or bottled spaghetti sauce, and the toppings are whatever you happen to have in the fridge. Claudia likes to use white Alfredo sauce, plenty of fresh spinach, and Italian sausage. My husband loves red sauce with pepperoni and jalapeño peppers- the sky’s the limit.

Once you make one of these pizzas, you’ll quickly find your favorite toppings and you’ll enjoy pizza that can be made in less than 30 minutes. Leftovers make great toppings, as well as fresh vegetables. Each pizza takes only 1/4 cup cheese (any more and the pizza becomes greasy). I like to add a small sprinkling of Parmesan cheese on top of the toppings.

1 Serving

1 8" whole wheat flour tortilla
2 to 3 tablespoons pizza sauce, red or white according to taste
1/4 cup shredded mozzarella cheese
Pizza toppings of your choice
1 to 2 tablespoons freshly grated Parmesan cheese

  1. Preheat oven to 400°.
  2. Line a baking sheet with parchment or Silpat.
  3. Place the tortilla on the parchment; spread the pizza sauce over the tortilla.
  4. Sprinkle the mozzarella cheese over the sauce.
  5. Add the pizza toppings of your choice.
  6. Sprinkle the Parmesan cheese on the toppings.
  7. Bake 15-20 minutes or until the cheeses are melted and the tortilla is crisp.
  8. Cut into wedges with kitchen scissors.
