Zucchini Walnut Chocolate Chippers Recipe
Got Zucchini? End of summer usually means plenty of zucchini and these soft, old-fashioned cookies are a good way to use it up. Zucchini Walnut Chocolate Chippers are easy to put together, and are great for the cookie jar. Kids even like these cookies, and most won't have any idea that they are eating zucchini. These are especially good warm from the oven when the chocolate is gooey and the cake-like cookies are very soft.

While the original recipe calls for walnuts, you can substitute pecans or almonds if you prefer; or if you don’t like nuts, you can leave them out.

About 4 dozen

3/4 cup softened butter
1 1/4 cups sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups finely grated zucchini

2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon

1 cup chopped walnuts
1 1/2 cups semi-sweet chocolate chips

  1. Preheat oven to 400°.
  2. Line several baking sheets with parchment.
  3. Cream the butter and sugar until light; mix in the egg and vanilla.
  4. Stir in the zucchini.
  5. Place the flour, baking powder, salt, and cinnamon in a fine strainer set over the zucchini mixture; shake through.
  6. Mix on low speed until incorporated.
  7. Stir in the walnuts and chocolate chips.
  8. Scoop tablespoon sized balls onto the prepared baking sheets.
  9. Bake 12-15 minutes or until set.
  10. Remove from the oven and transfer to cooling racks to cool thoroughly.
