Southern Style Blackberry Cobbler Recipe
My southern husband loves the cobbler he grew up with: flaky pie crust lining the dish with lots of fruit filling inside and topped with a lattice of more pie crust – in essence, a deep dish blackberry pie. The following Southern Style Blackberry Cobbler is perfect when blackberries are in season. While it does require rolling out pie crust, the flaky results are well-worth it.

Crust:
1 1/2 cups flour
1/2 teaspoon salt
2 teaspoons sugar
2 tablespoons shortening
1 1/2 sticks cold butter

Filling:
3/4 cup sugar
2 tablespoons flour
pinch salt
4 tablespoons butter, cut up

2 pounds blackberries, or 2 16 ounce packages frozen blackberries (without sugar)

2 tablespoons whipping cream
2 tablespoons sugar

  1. Preheat oven to 350°.
  2. Crust: Mix the flour, sugar, and salt in bowl of food processor. Add the shortening and butter; pulse 12-15 times until the mixture resembles coarse crumbs. Turn on the processor and add the ice water, processing until it forms a ball. Set aside 1/3 of the mixture for the lattice. Roll out the dough and line a 2-3 quart dish with the dough.
  3. Filling:In a large microwaveable bowl, mix the sugar, flour, and salt; stir in the butter. Add the blackberries and toss to coat. Microwave on high 5 minutes; stir well and microwave an additional 5 minutes until the blackberries are partially cooked and the juices are thickened slightly. Pour the filling into the crust-lined dish.
  4. .Roll the remaining 1/3 of the dough out into a rectangle and cut 1" strips. Place the strips on top of the blackberry filling, weaving to make a lattice. Lightly brush the top with the cream, then sprinkle with the 2 tablespoons sugar.
  5. Bake 40-50 minutes until the top crust is golden. Serve warm with ice cream or whipped cream.
