I love my Instant Pot. It isn’t just for main dishes and soups, it does a great job on desserts, too. It is really a time saver for me. Cheesecake works very well in the Instant Pot, and it’s so easy, you’ll find yourself making it often. The following Instant Pot Ding Dong Cheesecake is very easy – Ding Dongs or similar snack cakes for both the crust and topping. I recently discovered a silicone sling that works extremely well in the Instant pot, making it very easy to remove pans deep in the pot.

This recipe came about when I discovered a package of Ding Dongs that were going stale, and rather than waste them, I added them to this cheesecake. The official Hancock tasters were thrilled, and there were no leftovers.

1 12 3/4 ounce package Chocolate Snack Cakes with Creamy Filling, such as Hostess Ding Dongs, (10 Ding Dongs)

Filling:
2 8 oz. packages cream cheese
1/2 cup sugar
2 tablespoons flour
2 eggs
1/4 cup sour cream

Topping:
1/2 cup semisweet chocolate chips
1/4 cup whipping cream

  1. Pour 1 1/2 cups water into the bottom of a 6 or 8 quart Instant Pot. Place a rack into the pot, and make a sling (or use a silicone sling) over the rack.
  2. Spray a 7 or 8" springform pan with non-stick spray. Line with parchment and spray the parchment.
  3. Place 5 of the Ding Dongs on the bottom of the pan and press them down to cover the bottom with no gaps.
  4. Place the filling ingredients in the bowl of a food processor and whizz until smooth. Pour over the Ding Dongs.
  5. Press the remaining Ding Dongs on top of the filling.
  6. Place the pan in the Instant Pot; tuck the ends of the sling on the side of the pan.
  7. Cover the pot, set the valve to sealing, and set to Manual for 25 minutes.
  8. When the cycle has finished, let the pressure release naturally (25 to 30 minutes). Remove the lid.
  9. Use the sling to lift the pan from the pot and refrigerate until thoroughly chilled before slicing.
  10. Drizzle with the chocolate topping.
  11. Chocolate topping: Mix the chocolate chips and whipping cream in a microwave-safe container. Microwave 2 minutes. Let sit 4-5 minutes. Whisk until thickened.
