Up-Chuck-A-Mole Recipe
For a couple of years, there have been pictures on Pinterest and in dozens of blogs, of a small carved pumpkin with guacamole spilling out of the mouth; it appears that the pumpkin is throwing up – YUK! But since serving gross and disgusting dishes on the annual Halloween BOO-ffet is expected and fun, this dish makes a great appetizer. Rather than having to take hands-on time to carve a pumpkin, there are inexpensive cute candy dishes in variety stores for sale (I found one at Wal-Mart for $3.99); they have large openings in the mouth to hold the guacamole (or whatever). The following dish, Up-Chuck-A-Mole, is a spicy version of homemade fresh guacamole which spills out of the pumpkin and is surrounded by blue corn tortilla chips (they appear black in keeping with the Halloween theme). Some stores carry orange and black tortilla chips, which are even better.

Bits of tomato stirred into the guacamole make it appear a bit bloody (if you use your imagination, of course), or you can substitute spoonfuls of salsa swirled into the guacamole. Since it's absolutely necessary to have a variety of dishes on the BOO-ffet table, you'll want to make sure this is one of them. It will disappear quickly.

12 Servings

3 medium avocados
2 tablespoons very finely chopped onions
1 clove very finely chopped garlic
1 to 3 jalapeno peppers, seeded and very finely chopped
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon ascorbic acid mixture, (like Fruit Fresh)
1 tablespoon freshly squeezed lime juice
1 teaspoon salt
1 cup sour cream
1 Roma tomato, diced, or 1/2 cup salsa, (optional)
  1. Scoop the avocados from their shells and place on a large plate.
  2. Coarsely mash, then add the onions, garlic, jalapeno peppers, cayenne pepper, ascorbic acid mixture, lime juice, and salt.
  3. Mash until mixed well, but still a little chunky.
  4. Fold in the sour cream.
  5. Adjust seasonings to taste.
  6. Spoon the mixture into the mouth of a pumpkin candy dish or small carved pumpkin to appear like the guacamole is spilling out of the mouth Fold in the tomato or swirl in the salsa and surround with blue corn tortilla chips.
