Chicken, Bacon, & Tortellini Recipe
Fresh tortellini is readily available in most grocery stores nowadays, and even though it isn't quite as good as homemade (and does contain preservatives), it will do in a pinch, especially when time is at a minimum. This quick and yummy Chicken, Bacon, and Tortellini is a great example of how convenience foods can be used to save time without sacrificing flavor.

Even though there is a little chopping to do, it can be done while the bacon is cooking; also the water for the tortellini can be coming to a boil while the bacon is cooking. Once the tortellini is in the boiling water, it takes only about 2 minutes to cook it to the al dente stage; make sure you don't overcook it. By multitasking, the entire dish will take about 30 minutes from start to finish. It can be served with crusty fresh bread and a green salad if you have time.

6 Servings

8 ounces fresh tortellini, any favorite flavor
Boiling salted water

6 ounces peppered bacon, chopped
1/2 cup chopped onion
1 large fresh jalapeno peppers, chopped

6 ounces boneless skinless chicken breast halves, cut into 1/2" chunks
4 ounces Parmesan cheese, freshly grated or finely chopped (not the kind in the green container)
1/2 cup heavy cream
1/4 cup panko breadcrumbs
  1. Cook the tortellini in the boiling salted water 2-3 minutes or until not quite al dente (it will finish cooking later).
  2. Drain well and set aside.
  3. Meanwhile, cook the bacon in a skillet until crisp; remove the bacon to paper towels to drain.
  4. Add the onion and jalapeno peppers to the skillet and cook them over medium heat.
  5. Add the chicken chunks and cook until the chicken is white.
  6. Add the tortellini and brown a little.
  7. Sprinkle with all but 2 tablespoons of the cheese; stir until melted.
  8. Sprinkle with the breadcrumbs and remaining cheese.
  9. Place under the broiler and broil until the top is crisp; serve immediately.
