A Crock of Entrails Recipe
Sometimes when we are planning a Halloween BOO-ffet, it's fun to name the dishes something disgusting, even though the dish is actually not disgusting at all. Case in point: A Crock of Entrails. The dish actually consists of old fashioned frankfurters covered with a yummy sauce. After slow cooking, the frankfurters are butterflied (split down the middle) and placed on buns; they are sprinkled with cheese and broiled until bubbly. YUM!

The sauce is quick and easy to make; you may want to double it so guests can spoon extra over their sandwiches. Even though these frankfurters have a disgusting name, they aren’t scary looking, and they especially aren’t scary tasting. They are so quick and easy, you’ll actually want to make them all year round.

12 Servings

2 1/4 pounds old fashioned frankfurters, with connected casings

Sauce:
4 tablespoons butter
2 cups finely chopped onion
3 cloves garlic, finely minced
2 to 4 red jalapeno peppers, seeded and finely chopped
3 tablespoons mustard
1/4 cup Worcestershire sauce
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 cup chili sauce
1 cup water

3 cups grated cheddar cheese
12 hotdog bun(s)
  1. Place the frankfurters in the crock of a slow cooker; cover, and set the heat to low.
  2. Make the sauce: melt the butter in a medium skillet; add the onions, garlic, and hot peppers.
  3. Stir for 2-3 minutes until the onions begin to soften.
  4. Add the mustard, Worcestershire sauce, sugar, salt, pepper, chili sauce, and water.
  5. Bring to a boil, turn down to a simmer, and cook 5-10 minutes or until slightly thickened.
  6. Pour half of the sauce over the frankfurters, re-cover the slow cooker, and let cook on low 4-6 hours.
  7. For each serving, cut a frankfurter down the middle, place it on a bun, sprinkle with 1/4 cup cheese, and broil until bubbly.
