Cranberry Chicken Salad Christmas Tree Recipe
Good food is an integral part of most Christmas celebrations. While most families have their traditions for the actual Christmas dinner, there are always parties and get-togethers that also require festive food. If you’re looking for something fairly casual but easy and good, consider making this Cranberry Chicken Salad Christmas Tree. It consists of a luscious cranberry chicken salad spread on giant spinach wraps, which are sliced and stacked to make a cute Christmas tree.

These sandwiches would be great served at a Trim-the-Tree party; warm soup would make a great accompaniment, and/or a festive salad.

12 Servings

1 1/2 cups fresh cranberries, rinsed, drained, and coarsely chopped
6 tablespoons sugar

6 cups cooked chicken breast, shredded
Salt and freshly ground black pepper, to taste
1 bunch chopped green onion
1 cup non-fat Greek Yogurt
1 cup light mayonnaise
1 cup salted cashews, coarsely chopped

6 12" spinach wraps
1/3 cup butter

Yellow bell pepper, for garnish
Fresh cranberries, for garnish
  1. Mix the cranberries and sugar, stir them well, and let them sit for a few minutes until the sugar is dissolved.
  2. Meanwhile, mix the chicken breast, salt and black pepper, onion, yogurt, mayonnaise, and cashews until thoroughly combined; stir in the cranberries.
  3. Lay one of the wraps flat on a counter top; spread with a thin layer of butter (prevents the chicken salad from soaking in and prevents soggy sandwiches) and spread with 1/6th of the mixture.
  4. Roll up tightly.
  5. Repeat with the remaining wraps.
  6. Cut about 1" off of each end to make them even, then cut each into eight equal slices - they will be about an inch thick, or thereabouts.
  7. Choose a cute Christmas tray and lay 12 of the slices in a circle, making sure you fill the middle with sandwiches, as well.
  8. Make a second layer of sandwiches on the first, about an inch in, placing the slices in between the slices on the bottom.
  9. Repeat, making each layer smaller, until you have used most of the sandwiches and the tower looks like a Christmas tree.
  10. Cut a star out of the yellow pepper; secure it to the top of the tree with a toothpick.
  11. Place a few loose cranberries over the sandwiches to resemble ornaments.
  12. Wrap with plastic wrap and refrigerate until serving time.
