Kiwi Pomegranate Christmas Tree Salad Recipe
Presentation is important, especially during the holidays when beautiful food is essential at gatherings, family parties, and buffets. This easy Christmas tree salad is made in about 20 minutes, and makes a striking presentation. Kiwi Pomegranate Christmas Tree Salad is delicious – the dressing is slightly sweet and creamy and makes a nice garland on the tree. Of course you can use a decorating bag and pipe perfect scallops (obviously, I didn’t take the time as the picture shows, but might if taking it to a gathering), but if you’re in a hurry, a plastic bag works just fine. There is plenty of extra dressing to serve along with the kiwi slices and pomegranate arils, and leftovers can be stirred into chunks of almost any fruit such as grapes, apples, pears, or even tangerine sections to make a quick fruit salad.

You can make the tree bigger for a larger group – just peel and slice more kiwis and add to the quantity of pomegranate arils on a bigger serving platter. I used a piece of a gingersnap for the tree trunk, but you can use a piece of pretzel, or anything that resembles a trunk – even a little tootsie roll or piece of chocolate.

6 Servings

6 kiwi fruits
1/4 cup pomegranate arils

Dressing:
1/2 cup plain Greek non-fat yogurt
1/4 cup light mayonnaise
1 teaspoon lemon juice
2 tablespoons honey
1/2 teaspoon vanilla
1 dash salt

1 piece gingersnap cookie, for the trunk
  1. Cut the ends off the kiwi fruits.
  2. Slide a teaspoon under the skin and move it around the fruit; the skin will slip off.
  3. Slice them into 1/4 " slices.
  4. Arrange the kiwi slices on a serving platter in layers to resemble a Christmas tree; sprinkle with the pomegranate arils.
  5. Mix the dressing ingredients in a MagicBullet or whisk together until smooth.
  6. Transfer the dressing to a plastic bag, cut a small hole in the corner, and pipe "garlands" onto the tree.
  7. Place the piece of cookie (or other brown morsel) in the middle of the bottom to resemble a trunk.
  8. Serve with the additional dressing on the side.
