Every family, it seems, has a beloved dish that everyone loves and looks at as the ultimate comfort food. In Britney Baker?s home, the beloved dish is referred to as Pepperoni Casserole and is a gooey, cheesy mix of pasta, Italian marinara sauce, mozzarella cheese, pepperoni, and favorite pizza toppings. It is a cross between lasagna and pizza ? both of which almost everyone loves. Here?s my version of Britney Baker?s Pepperoni Casserole. I added fresh mushrooms and chopped jalapenos because that?s what my family likes on pizza. I always have browned ground beef mixture from the Ground Beef Module in my freezer, which is a timesaver, but you can easily brown a pound of ground beef with onions and your favorite spices to use in this dish. You can use your favorite spaghetti sauce, or if you are lucky enough to have homemade sauce, it makes the casserole even better. If you prefer your casserole extra saucy, you can double the sauce.

12 Servings

1 pound ground beef mixture from the Ground Beef Module, or 1 pound ground beef browned with onion and seasoned
1 6 oz. package sliced pepperoni, separate the slices if you have time
24 ounces spaghetti or marinara sauce, a can or jar or homemade if you have it

8 ounces penne pasta, cooked al dente in boiling salted water and well-drained
3 cups shredded mozzarella cheese, divided

Pizza toppings of your choice, mushrooms, olives, peppers, onions, etc.

1 cup freshly grated Parmesan cheese
  1. Preheat oven to 350?.
  2. Mix the ground beef, pepperoni, and spaghetti sauce; stir in the cooked pasta and two cups of the mozzarella cheese.
  3. Stir in your favorite pizza toppings.
  4. Spread the mixture into a shallow 9" x 13" glass baking dish and sprinkle with the remaining mozzarella cheese and Parmesan cheese.
  5. Bake uncovered until bubbly for 45 minutes to an hour.
