Air Fryer Mexican Donuts Recipe
Looking for a quick and easy Mexican dessert to serve for Cinco de Mayo (the Mexican holiday commemorating the Battle of Pueblo on the fifth of May)? Although the Battle of Pueblo doesn’t really mean much to most Americans, Cinco de Mayo is a good excuse to celebrate with luscious Mexican food. If you have an air fryer, you can “fry” these yummy Air Fryer Mexican Donuts in five minutes; prep time adds another five minutes to cut holes out of the middle of refrigerator biscuits, and dipping in the Mexican chocolate takes another five. That means warm, fresh donuts in less than 30 minutes!

Mexican chocolate is available on the Mexican aisle of most larger grocery stores. It contains cinnamon and is grainier than regular chocolate. The package contains disks of chocolate to melt and make Mexican hot chocolate, but it is great for use in recipes, too. It’s a good idea to keep this chocolate on your shelf. The two most popular brands are Abuelita and Ibarra.

8 Servings

1 16 oz. can jumbo refrigerator biscuits (such as Grands)

Glaze:
3 1/8 ounces Mexican chocolate, (1 tablet)
1/4 cup heavy whipping cream

  1. Spray the basket of an air fryer with non-stick spray.
  2. Cut a hole in the middle of each of the refrigerator biscuits with a small biscuit cutter, and arrange as many biscuits as possible in the basket. If there is room, add some of the holes.
  3. Spray the dough lightly with a little oil.
  4. Set the air fryer to 360° and "Fry" the donuts for 5 minutes.
  5. When the cycle is finished, dip the tops in the glaze and let set on a rack.
  6. Glaze: Place the Mexican chocolate tablet and the whipping cream in a microwaveable bowl; microwave 2 minutes.
  7. Let sit 5 minutes; stir until smooth and shiny.
