There are minimal ingredients in this soup, and it is easily made creamy with the versatile Basic Cream Soup Mix, which can be made easily and keeps in a cool place for months.

If you can’t find it at your grocery store, Salt Free Fajita Seasoning is easily made with spices you probably have on your shelf now. It is best because it allows you to add the amount of salt you want to dishes, since commercial fajita seasoning is mostly salt, and in this recipe, some of the ingredients are salty already.

1 tablespoon butter
1 pound boneless skinless chicken breast halves, cleaned, trimmed of any fat or veins, and cut into 1/2" chunks
2 tablespoons Salt Free Fajita Seasoning

1 16 oz. package southwest Vegetable Blend (Bird's Eye C&W Ultimate Southwest Blend or
1 15 oz. can diced tomatoes and green chilies
10 cups chicken broth

2 cups Basic Cream Soup Mix

3 cups Mexican blend cheese

  1. Melt the butter in the Instant Pot on the sauté setting.
  2. Add the chicken chunks; sprinkle with the salt-free fajita seasoning and stir fry until the chicken pieces are lightly browned.
  3. Turn the Instant Pot off and add the vegetables, diced tomatoes and green chilies, and chicken broth.
  4. Cover the pot, set the valve to sealing, and set to pressure cook for five minutes.
  5. When the cycle has finished, release the pressure.
  6. Whisk in the cream soup mix and turn the pot to the sauté setting, stirring constantly.
  7. Turn the pot off and stir in the cheese.
  8. When the cheese has melted, serve with crushed tortilla chips and avocado slices.
