Luxurious Lemon Jello Cake Recipe
Recently I volunteered to help with food for a funeral and was given a recipe for a Lemon Jell-O Cake which I made exactly according to the instructions. Although the cake turned out exactly like it should have, it was not pretty and not something I would ever serve. It definitely needed something on top to make it appealing and appetizing. When I made my own version for my family, I added sweetened whipped cream and Microwave Lemon Curd to elevate what was a plain, ugly cake to a Luxurious Lemon Jell-O Cake. The cake is very easy to make – a cake mix and package of gelatin – with a tart glaze over the top, which is tasty, as is, but boring. The extra toppings make it beautiful and even more delicious.

Cake:
1 lemon cake mix
1 3 oz. package lemon gelatin
1 1/4 cups water
3/4 cup vegetable oil
4 eggs

Glaze:
2 cups powdered sugar
1/3 cup fresh lemon juice


Whipped cream:
2 cups heavy whipping cream
2 tablespoons vanilla instant pudding mix
1/3 cup powdered sugar

1 cup lemon curd (homemade is best and very quick and easy in the microwave)

  1. Preheat oven to 350º. Spray a 9" x 13" shallow baking dish with Baker's Joy or grease and flour.
  2. Mix the cake mix, gelatin, water, vegetable oil, and eggs until smooth; pour into the prepared baking dish.
  3. Bake 35-40 minutes or until the cake pulls away from the sides of the pan.
  4. Remove from the oven and let cool 30 minutes.
  5. Meanwhile, whisk together the glaze ingredients until smooth.
  6. When the cake has cooled, poke holes over the surface with a fork; pour the glaze over all.
  7. Whipped Cream: Mix the heavy whipping cream, pudding mix, and 1/3 cup powdered sugar in a mixing bowl. Whip until stiff peaks form.
  8. Place dollops of whipped cream and lemon curd over the cooled cake; swirl them together decoratively, cover, and Refrigerate.
