Instant Pot Bacon Ranch Chicken w/ Spinach Recipe

Anyone looking for an incredible dish that is suitable for company will want to make the following Instant Pot Bacon Ranch Chicken with Spinach. Cream cheese, ranch dressing mix, and chicken broth make the luscious sauce; crispy bacon adds crunch and additional flavor.

8 Servings

6 ounces thick sliced bacon, chopped

2 pounds boneless skinless chicken breast halves, cleaned and trimmed of any fat, cut into 8 serving size pieces
Salt and freshly ground black pepper

2 cups chicken broth
1 8 oz. package cream cheese, softened
1 1/2 tablespoons dry ranch dressing mix

1 10 oz. package fresh spinach

  1. Turn the Instant Pot (or similar) to the sauté setting; cook the bacon until very crisp; remove the bacon from the pot to drain.
  2. Add the chicken breasts and quickly brown on each side sprinkling with salt and pepper; remove the browned chicken breasts from the pot.
  3. Add the chicken broth, bring to a boil, and scrape the crispy bits from the bottom of the pan.
  4. Whisk in the cream cheese and ranch dressing mix until fairly smooth.
  5. Add the chicken back into the pot and sprinkle with the cooked bacon.
  6. Cover the pot, set the valve to sealing, and set the pot to manual for 15 minutes.
  7. When the cycle is finished, do a quick release.
  8. Remove the chicken breasts from the pot and set aside; keep warm.
  9. Set the pot to sauté and add the spinach; stir until wilted, 2-3 minutes.
  10. Spoon the spinach onto a serving platter and top with the chicken. Pour any remaining sauce over the chicken breasts and serve immediately.
