Pork Chops with Bacon & Mushrooms Recipe
Pork chops are unpredictable. Sometimes they are perfectly tender, and other times they are dry and tough. Bone-in chops are often better than boneless loin chops, and they don’t seem to dry out as fast. Instant Pot Pork Chops with Bacon & Mushrooms is quite easy, and the luscious sauce with bacon and mushrooms is delicious over mashed potatoes, rice, or even pasta. Although this recipe is quickest when pressure cooked in the Instant Pot, it works well using the slow cooker cycle and cooking the chops for 3 - 5 hours.

8 ounces thick bacon, chopped

2 to 3 pounds bone-in pork chops, (about 6)
1 cup water
2 teaspoons pork bouillon, or 2 cubes (substitute chicken if pork isn't available)

1 medium onion, chopped
1 pound sliced mushrooms
1 16 oz. jar alfredo Sauce

Thickener
1/2 cup water
1/4 cup flour

1/4 cup chopped fresh parsley

  1. Cook the bacon in the pan of the Instant Pot set to the sauté setting until crisp.
  2. Remove the bacon from the pot to drain; pour off all except about 1/2 tablespoon bacon fat.
  3. Brown the pork chops, in batches, on both sides; remove the pork chops from the pan and set aside.
  4. Pour the water and pork bouillon into the pot, bring to a boil, and scrape the bottom to remove any crispy bits.
  5. Layer the pork chops, onions, mushrooms, and crisp bacon.
  6. Pour the Alfredo sauce over the bacon.
  7. Cover the pot, set the valve to sealing, and set the pot to manual for 20 minutes.
  8. When the cycle has finished, let the pressure release naturally for 20 minutes.
  9. Release the remaining pressure. Transfer the pork chops to a serving platter and keep warm.
  10. Mix the thickener ingredients (the magicBullet works perfectly) until smooth.
  11. Set the pot to sauté, bring the sauce to a boil, and whisk in the thickener; continue whisking until thickened.
  12. Pour the sauce over the pork chops, then sprinkle with parsley and serve.
