Meatball Bubble Biscuits Recipe
Most families have a dish that everyone loves and that is requested often. Even after the children are grown, they still ask for those dishes when they come home. The dishes aren’t usually fancy – actually, they are often quick dishes or casseroles made with convenience foods. My children still ask for Spicy Chicken and Mushrooms and Grand Style Ground Beef; neither dish is particularly exciting, but my adult kids still love them. My friend Susan Hamilton is a great cook; she entertains often and serves showstopping dishes to her lucky guests. However, her children, Jack and Ava, who are now grown (but still adorable), would rather eat the following Meatball Bubble Biscuits over anything gourmet. I’m sure that if I had made that recipe when my kids were little, this recipe would be on their favorites list.

Although the bubble biscuits look like they are a lot of work, they aren’t. They are quick and easy and made with convenience foods. I always keep a supply of meatballs in my freezer from the Basic Meatball Module, so I use them when making this dish. I would suggest that if you don’t have that module on hand, you choose frozen meatballs that are all meat instead of those that contain textured soy protein which makes them have a rubbery texture. The other ingredients needed are refrigerator biscuits, string cheese, and bottled spaghetti sauce. Nothing could be easier.

8 Servings

1 16 oz. can refrigerated flaky layer biscuits

8 Frozen Meatballs, preferably Italian flavored, cut in half
3 ounces mozzarella string cheese, cut into 6 pieces each
1 tablespoon freshly grated Parmesan cheese
1/2 teaspoon dried Italian seasoning
1/4 teaspoon garlic powder

1 cup spaghetti or marinara sauce, heated

  1. Preheat oven to 375º.
  2. Spray a round casserole dish (9") with non-stick spray.
  3. Remove the biscuits from the can and separate each of the eight biscuits into two biscuits each (16 rounds).
  4. Pat the biscuits to about 3" diameter.
  5. Place a half meatball in the center of each biscuit along with a piece of string cheese.
  6. Wrap the dough around the meatball and cheese; press the edges together until tightly sealed.
  7. Place, seam side down, into the prepared baking dish.
  8. Sprinkle with the Parmesan cheese, Italian seasoning, and garlic powder.
  9. Bake 25-30 minutes, or until the biscuits are baked through and are golden brown. Serve with the heated sauce.
