No-Bake Bunny Tails Recipe
Looking for something easy and fun for Easter? These No-Bake Bunny Tails are not only delicious, they are fun, easy, and colorful. They are simple enough for kids to make, and can be put together in minutes. It’s important to use unsweetened coconut, which can usually be found in the bulk foods aisle of larger grocery stores. Restaurant suppliers and some specialty food stores also carry it. If you are especially ambitious, you can purchase whole coconuts, crack them with a hammer, pull the coconut from the shell, peel the brown rind from the outside, and grate the coconut in the food processor. I doubt many of us have time for that, but it is an option.
Tinting coconut is easy; simply shake it up in a jar with a little food coloring. You can make your favorite spring colors, and it keeps well, so you can use the extra to coat cookies or sprinkle on bars or on frosted brownies. These cute little bunny tails keep well in an airtight container in the fridge.
48 walnut-sized bunny tails
4 3/4 - 5cups unsweetened coconut (small grind)
1 14 oz. can sweetened condensed milk
2 tablespoons melted butter
1 teaspoon vanilla
1/4 cup powdered sugar
Tinted Coconut:
2 cups unsweetened coconut
Gel paste food coloring

- Mix the coconut, condensed milk, butter, vanilla, and powdered sugar.
- Scoop 1" balls; using your hands, round out the balls and roll in the tinted coconut. If it sticks, dampen your hands a little.)
- Tinted Coconut: Measure 2 teaspoons water in a pint jar with a tight fitting lid.
- Squeeze a few drops of food coloring into the water, put the lid on, and shake well.
- Add 1/2 cup coconut, screw the lid on tightly, and shake well until the coconut is tinted. You may need to scrape the bottom a few times to break up any clumps of coconut; shake well until the clumps are broken up and the coconut is evenly colored.
- Pour the tinted coconut into small bags, leaving the bags open to dry, or place on plates to roll the coconut balls in.
