Just because you don’t have a big crowd to feed doesn’t mean you can’t take advantage of the timesaving aspects and convenience of an Instant Pot. In fact, Lisa Childs has released an excellent cookbook, The "I Love My Instant Pot®" Cooking for One Recipe Book: From Chicken and Wild Rice Soup to Sweet Potato Casserole with Brown Sugar Pecan Crust, 175 Easy ... Single-Serving Recipes which contains recipes for one that are not only delicious, but fairly easy. This cookbook has recipes for one that actually are appealing – there is something for everyone here. The only problem is that there are so many, it will take months to make all of the recipes that are in my queue.

As in any good Instant Pot cookbook, there are instructions and hints for successfully cooking in the Instant Pot. The explanations are concise and understandable and anyone, from beginning to advanced in cooking skills, will be able to follow them and create successful dishes.
While I prefer a picture of every dish, there are an acceptable number of good photographs to make this a good cookbook. The recipes are written in standard recipe form, and the instructions are easy to follow. There is a chapter on vegetarian dishes, as well as chicken, beef and pork, seafood, grains, soups, salads, side dishes, and even desserts. Every dish tried so far has turned out perfectly. Childs has obviously done her homework and tested these recipes so that they turn out.

This is one cookbook that will be used over and over; there will never be a problem deciding what’s for dinner. This one is highly recommended.
