Just the word “healthy” in the title of a cookbook conjures images of tree huggers eating wild garlic and hickory nuts in the forest. Luckily, Lauren Keating has different ideas on healthy, and has included recipes that actually taste good in her cookbook, Healthy Meal Prep Slow Cooker Cookbook: Nutritious Recipes to Prep Ahead and Enjoy All Week. There are chapters on food prep, making foods ahead, batch cooking, and organizing food for the week. This is helpful for those who are organized or want to learn to be organized.
Don’t be fooled, many of the recipes have been adapted to a healthier lifestyle, such as cream scones using non-fat yogurt instead of cream and whole wheat flour instead of white. Trendy recipes such as Shakshuka have been healthified a bit, and there are also breakfast casseroles that have been lightened up. Soups and stews usually do well when made a little healthier, and there is a good variety here. Vegans and vegetarians will like this cookbook because there is a chapter dedicated to them and the dishes sound pretty good. The chicken and seafood chapter has several mouthwatering recipes that are easy to make and will appeal to the entire family. The Pork, Lamb, and Beef chapter is equally good.
The upside is that all of the dishes are made in the slow cooker which not only saves time, doesn’t heat up the kitchen, and doesn’t require constant checking. Keating has included recipes that no one would guess can be made in the slow cooker, and the recipes turn out well (i.e. Whole Wheat Dinner Rolls).
Unfortunately there are a minimal number of photographs, and that is actually the only negative about this cookbook. The recipes are written in standard form with easy-to-follow instructions.
Anyone who is interested in healthifying their food and organizing their meals to save time prepping, will love this cookbook.
