Miho's Easy Yakisoba Recipe
My friend Miho is from Japan, and makes, hands down, the best yakisoba on the planet. When she taught me how to make her version, I was shocked at how quick and easy it is, and I always keep some of the noodles in my freezer so that I can make it anytime. Yakisoba is simply Japanese fried noodles – yaki means fried, and soba means noodles – and it is usually a restaurant dish, since most of us don’t often make it at home. Miho’s Easy Yakisoba is quick enough for a weeknight, and it will become a family favorite.
Thanks to Miho, you can make this easy, yummy noodle dish at home using convenience foods from the Asian grocery store and can customize it using your favorite meat and vegetables. You can also easily make it spicy if you like a bit of heat.

4-6 Servings

2 tablespoons vegetable oil, divided
1/2 pound chicken, beef, or pork, sliced thin

1 pound stir fry vegetables, such as onions, carrots, mushrooms, cabbage, broccoli, etc., sliced thinly
1 6 oz. package naruto (steamed fish cake), (optional)

1 16 oz. package yakisoba stir-fry noodles with seasoning sauce base, (Miho uses Maruchan's brand)””
White pepper, to taste - or black pepper or red chilies

  1. Heat 1 teaspoon vegetable oil in a non-stick wok; add the meat and stir-fry until it's just cooked through.
  2. Remove from the wok and add 2 teaspoons vegetable oil to the wok; add the vegetables and stir fry until crisp-tender. Remove from the wok and set aside.
  3. Add the tablespoon vegetable oil to the wok; add the noodles and coat with the oil; add 1/2 cup water, cover, and let the noodles steam until the water has evaporated, separating them with a meat fork to avoid breaking them up.
  4. Add the naruto (if using), the meat, and vegetables as well as the sauce packets.
  5. Heat through, stirring to mix. If you like the noodles crisp, keep cooking a little longer. Add the white pepper and/or black pepper and red chilies to taste.
  6. Stir, heat thoroughly, and serve.
