Quickie Fruit Salad Recipe
Summer fruit is abundant, and it seems bowls of fruit salad are always popular at brunches, breakfasts, or other summer meals. One of the easiest salads is this Quickie Fruit Salad where you sprinkle pudding mix over a big bowl of fruit. The pudding mix gives the fruit a good flavor, and binds it together a bit. My friend, Kari, who gave me this recipe uses sugar free white chocolate pudding mix, but it is sometimes hard to find; I have found that the cheesecake flavor is also very good.
If you don’t have the sugar free version of pudding mix, feel free to use regular; however, don’t use the whole package. Sprinkle the mix on in layers, stirring to mix. It helps to have pineapple, mango, and/or kiwi because they have a lot of juice which seems to make the pudding blend better. In mine, I try to use a cup or two of strawberries, blueberries, and raspberries, as well as at least one mango, a couple of kiwi fruits, and a big serving of fresh pineapple. If you end up with too much fruit, it’s okay. You can either snack on the extra or add it to your salad to make it a bit bigger. You can also use just strawberries, or just pineapple, but it won’t be as colorful. Note: you will be using only the dry pudding mix- don’t mix it with any liquid.

10 cups summer fruit (berries, mango, kiwi, pineapple, grapes, etc., cut into bite-size pieces
1 ounce package sugar free instant white chocolate pudding mix

  1. Place the cut up fruit in a serving bowl.
  2. Sprinkle the pudding in gradually, stirring after every tablespoon.
  3. Garnish with mint sprigs if you have them. Chill and serve.
