Valentine's Day Torte
Valentine’s Day calls for a decadent dessert, but it’s sometimes hard to find the time to create one. This Valentine’s Day Torte features the traditional Valentine’s Day chocolate and cherries without the need to spend hours in the kitchen. The upside is that it starts with a cake mix and utilizes canned cherry pie filling and instant vanilla pudding, making it quick and easy. The end result is a beautiful dessert that can be served to family, friends, and even the most important company.

Ganache Filling and Topping:
1 cup semi-sweet chocolate chips
1/2 cup heavy whipping cream

Cream Filling:
1/2 3 oz. package vanilla instant pudding mix
1 cup milk

1 15 oz. can cherry pie filling

1 9" yellow cake layer made from a yellow cake mix

  1. Make the ganache: Place the chocolate chips and whipping cream in a microwave-safe container (preferably a glass measuring cup).
  2. Microwave 3 minutes; remove from the oven and let sit 5 minutes then whisk until smooth.
  3. Cream Filling: Whisk together the pudding mix and milk until smooth; pour into a bowl and chill.
  4. Cut the cake layer in half horizontally making two layers; place the bottom layer on a serving platter.
  5. Assembly: Spread 1/3 of the ganache over the bottom cake layer, cut side up.
  6. Spread half of the cream filling over the ganache.
  7. Drop dollops of the cherry pie filling over the cream filling.
  8. Place the top layer of the cake over the fillings.
  9. Cover with 1/3 of the ganache, spread the remaining pie filling over the ganache, and drizzle the remaining ganache over the cherry pie filling.
  10. Refrigerate until chilled through.
