2-Ingredient Speculaas Fudge Recipe
Speculaas or Speculoos is a popular European Christmas cookie that originated in Germany and the Netherlands. Since it is now marketed by Lotus under the brand name Biscoff, these spiced cookies are very popular in the US and are even served on Delta Airlines. The Biscoff brand is now sold in most grocery stores in the US. Because of the brand name, some people erroneously call the cookies biscotti, (biscotti are twice baked Italian cookies and are totally different from these spiced cookies). The Biscoff cookies have become so popular, that the company has developed what they call a European cookie spread. It is also marketed by other companies and called Speculoos Cookie Butter; these varieties can be found at Trader Joe’s and WalMart, as well as some larger grocery stores. The spread is very good on buttered toast and biscuits, with fruit, or as an ingredient in cakes, cookies, and pies. You’ll want to pick up a jar to use in the following delicious and easy 2-Ingredient Speculaas Fudge. It has only two ingredients and can be put together in 10 minutes. It will make a great addition to your holiday treat trays or will be something fudge lovers will devour.

36 1” pieces

1 12 oz. container Whipped Vanilla Frosting
1 13.5 ounce jar Biscoff European Cookie Spread , or Speculoos cookie butter

  1. Line an 8" x 8" glass dish with aluminum foil.
  2. Spray the foil with non-stick spray.
  3. Scrape the frosting into a large microwaveable bowl (I use my 8 cup Pyrex measuring cup).
  4. Scrape the jar of cookie spread into the bowl.
  5. Microwave 1 minute on high power.
  6. Remove from the microwave and stir until well-mixed.
  7. Pour into the prepared pan and let sit until firm. You can speed it up by putting it in the fridge.
  8. Cut into 36 squares.
