Instant Pot 5-Minute Spiced Honey Chicken Recipe
I’m in love with my Instant Pot®, and I’m not alone. I can’t imagine trying to prepare weeknight meals without it. If you don’t have one, and need to cook quick meals, you will want to pick one up; they are always on sale, and you can get good deals on various brands ofElectric Pressure Cookers. There are dozens of good brands. I own four Instant Pots°, as well as 6 of different sizes and other brands including Ninja, Gourmia, Pressure Pro, and Nuwave (remember, the one with the most wins!). They all work well and there are times that I have three or four going at once. One Instant Pot is enough for most cooks, especially for those who don’t like to spend much time in the kitchen. I use the extra pots for entertaining and when teaching classes. 5-Minute Instant Pot Spiced Honey Chicken cooks in the Instant Pot in 5 minutes. Prep time is about 10 minutes. I always cook rice in another pot (5 minutes) while cooking the chicken.

The sauce can be either whisked together or blended in a bullet blender; it’s quick and easy. Even if I’m halving the recipe, I make the entire amount of sauce because it’s so good over the rice.

6 Servings

2 pounds boneless skinless chicken breast halves, cleaned and trimmed of any fat or veins and cut into 6 serving size pieces

Freshly ground black pepper

Sauce:
1/4 cup olive oil
1/2 cup honey
1/4 cup cider vinegar
1/4 cup chili sauce
1 tablespoon Worcestershire sauce
1 envelope dry onion soup mix

1/2 cup water
1 tablespoon cornstarch

  1. Turn the Instant pot to the sauté setting.
  2. Spray the pan with non-stick spray.
  3. Add the chicken breasts and brown on both sides.
  4. Sprinkle with freshly ground pepper.
  5. Sauce: Mix the olive oil, honey, cider vinegar, chili sauce, Worcestershire sauce, and dry onion soup mix in a bullet blender; whizz until well mixed. (alternately whisk the ingredients together).
  6. Pour over the browned chicken breasts.
  7. Set the Instant Pot valve to sealing, set to Manual for 5 minutes, and let the cycle run.
  8. When the cycle has finished, release the pressure.
  9. Mix the water and cornstarch until smooth; whisk into the sauce and cook on the sauté setting until thickened. Serve over rice.
