Chicken & Mushroom Alfredo Dump Dinner Recipe
Almost everyone is busy, and it’s hard to find time to prepare good meals. Dump dinners save lots of time, since there is very little advance prep. Chicken and Mushroom Alfredo Dump Dinner is a good example of a quick dinner that can be made easily on a weeknight, since it takes only about 10 minutes to put together. The only ingredient that needs advance prep is a couple of chicken breasts that are cut up into chunks – about 2 minutes hands-on time. Other than that, everything is layered in a casserole dish, covered, and baked. No need to cook the pasta; it cooks perfectly and absorbs the liquid in the sauce. If you want more creamy sauce, simply add another jar of Alfredo sauce to the chicken broth mixture.

1 1/2 pounds boneless skinless chicken breast halves, cleaned of any fat, veins, etc.

1 1/2 cups chicken broth
14 1/2 ounces jar Alfredo sauce
1/2 teaspoon freshly ground black pepper

8 ounces rotini pasta
1 cup bacon crumbles
8 ounces sliced mushrooms

2 cups grated mozzarella cheese

  1. Preheat oven to 425°.
  2. Spray a 7" x 11" shallow glass baking dish with non-stick spray.
  3. Cut the chicken breasts into 1' chunks; set aside.
  4. Whisk together the chicken broth, Alfredo sauce, and pepper.
  5. Sprinkle half of the dry rotini over the bottom of the prepared baking dish.
  6. Sprinkle evenly with half of the chicken, half of the bacon, and half of the mushrooms; pour half of the Alfredo sauce mixture over. >
  7. Top with the remaining pasta, chicken, bacon, and mushrooms.
  8. Spray the bottom side of a large piece of aluminum foil with non-stick spray and tightly cover the dish.
  9. Bake about 50 minutes or until the pasta is just barely al dente.
  10. Remove the foil, sprinkle with the mozzarella cheese, and place back in the oven.
  11. Let the uncovered casserole bake an additional 10-15 minutes or until the cheese is bubbly.
