Breakfast Brioche Buns Recipe
Brunch is a must when hosting guests during the holidays, so it’s nice to have a few good brunch dishes to serve. I saw a Pinterest post that had a sweet roll type brunch bun stuffed with breakfast foods, and thought that I would try brioche stuffed with scrambled eggs, bacon, ham, and cheese. Since the brioche dough is easily made in the automatic bread machine, these Breakfast Brioche Buns are easy to assemble, and they freeze well if you prefer to make them ahead.

Everyone loves the buttery brioche dough, and the other ingredients go well with it. Pair these rolls with fresh fruit, juices, or other brunch specialties. They are also a great go-to breakfast, heated in the microwave and carried out the door

Dough:
4 eggs
1/2 cup warm water
3 1/2 tablespoons powdered milk
3 1/2 cups flour
3/4 cup plus 2 tablespoons butter
1 teaspoon salt
2 tablespoons yeast

Filling:
2 tablespoons butter, divided
12 eggs
salt and freshly ground black pepper

2 1/2 cups grated sharp cheddar cheese, divided
1/2 pound bacon, chopped, cooked crisp, and drain3ed
2 cups lean ham, diced

Topping:

1 egg yolk, beaten


  1. Place all dough ingredients in the bread machine in the order listed.
  2. Turn the machine to the dough setting and turn on. Check during the first few minutes to make sure the ingredients are mixing properly. If the dough is stiff, add a little more water; if it is too soft to form a ball, add a little more flour.
  3. While the dough is mixing in the bread machine, melt 2 tablespoons butter in a large skillet.
  4. Add the eggs and lightly scramble - make sure you leave them a bit runny so they don't overcook while in the oven.
  5. Cook the bacon, drain and set aside.
  6. When the cycle is finished, transfer the dough to a lightly floured pastry cloth or countertop.
  7. Roll out into a large rectangle about 1/4" thick.
  8. Spread 2 tablespoons butter over the surface of the dough.
  9. Spread the cooked egg evenly over the dough; sprinkle with the cheese, bacon, and ham.
  10. Starting at the wide end, roll up as tightly as possible and seal at the seam.
  11. Cut into 16 slices and place them on a parchment-lined baking sheet. Brush brioches with egg yolk. Let rise in a warm place 30-45 minutes, or until very light.
  12. Bake brioche at 400° for 20-25 minutes or until golden brown. Cool on a rack.
