Apple Cream Crepes Recipe
There is no set rule that says pie and cake must be served as dessert at Thanksgiving dinner. There are dozens of desserts that are just as delicious. These Apple Cream Crepes are a good example, they are easy to put together, and everyone will love them. They are actually a good dessert to serve all through the holidays, as well as whenever you have some good apples that need to be used up.

Basic Crepesare easy to make, but for those who don’t care to make them from scratch, they are available at most major grocery stores, and the store-bought kind are actually very good. When serving, these are easy, just warm the crepes, fill them, roll up, and top with whipped cream.

Pastry Cream:
2/3 cup sugar
1/3 cup flour
1 pinch salt

2 cups milk, divided
2 large eggs

2 tablespoons butter

Caramelized Apples:
2 tablespoons butter
1 1/2 pounds cooking apples, such as
1/4 cup Calvados, or other apple brandy
2/3 cup brown sugar
1/2 teaspoon apple pie spice

Butter Pecan Sauce:
2 tablespoons butter
1/2 cup chopped peanuts
1 cup maple syrup
1/4 teaspoon apple pie spice

24 8" crepes
Sweetened Whipped Cream

  1. Pastry Cream: Whisk together the sugar, flour, and salt; add the 1/2 cup milk and 2 eggs; whisk until smooth.
  2. Heat the 1 1/2 cups milk in the microwave until heated.
  3. Whisk the hot milk into the egg mixture.
  4. Microwave 2 minutes; whisk until smooth and microwave 1-2 minutes or until boiling.
  5. Whisk in the butter.
  6. Lay a piece of plastic wrap directly on top of the cream and set aside.
  7. Caramelized Apples: Meanwhile, melt the butter over medium-low heat in a large skillet.
  8. Add the apple chunks and let them cook, stirring occasionally until they begin to soften.
  9. Pour in the Calvados and sprinkle with the brown sugar and apple pie spice.
  10. Turn the heat up a notch and stir until the Calvados is evaporated and the sugar has melted and caramelized over the apples.
  11. Stir the apples into the cream filling.
  12. Butter Pecan Sauce: Melt the butter in a small skillet; add the pecans and let cook until the pecans start to toast.
  13. Add the maple syrup and apple pie spice; bring to a boil and let cook until slightly thickened.
  14. Assembly: Heat the crepes slightly; spoon filling down the center, roll up, and place two on each serving platter.
  15. Drizzle with the butter pecan sauce and top with sweetened whipped cream. Serve immediately.
