Millionaire Shortbread Brownies Recipe
Millionaire shortbread is a traditional tea-time treat in the UK; it consists of a buttery shortbread layer topped with a layer of caramel and topped with good chocolate. Even store-bought brands are yummy, and the actual millionaire’s shortbread isn’t difficult to make. However, with Mom’s Brownie Mix the following Millionaire’s Shortbread Browniesare moist, chocolaty, and absolutely delicious>. They also freeze well.

32 Brownies

1 pound shortbread fingers, or any all-butter shortbread cookies
1/2 cup melted butter

8 ounces caramels, unwrapped

Brownie Layer:
6 to 8 ounces zucchini
3 cups Mom's Brownie Mix
3 eggs
1 tablespoon vanilla extract

1 1/2 cups semi-sweet chocolate chips

  1. Preheat oven to 350°.
  2. Spray a 9" x 13" shallow baking dish with non-stick spray and line with parchment; spray the parchment.
  3. Place the shortbread cookies in the food processor and process until they become fine crumbs.
  4. With the motor running, pour in the butter.
  5. Dump the mixture into the prepared baking dish and press evenly.
  6. Sprinkle the caramels evenly over the crust.
  7. Place the zucchini in the food processor and pulse until finely chopped; add the brownie mix, eggs, and vanilla; process until smooth, scraping down the sides at least once.
  8. Spread the brownie mixture over the caramels.
  9. Bake 35-40 minutes or until the center is set.
  10. Remove from the oven and sprinkle the chocolate chips over all; let sit 5 minutes, then spread over the warm brownies.
  11. Let cool completely before cutting into 32 squares or bars.
