Gooey Marmalade Cream Cheese Brownie Recipe
Almost everyone loves brownies – some like cakey brownies; others like chewy brownies, and there are even those who like their brownies with fillings or toppings to make them gooey. For all of the latter brownie lovers, the following Gooey Marmalade Cream Cheese Brownies will definitely fill the bill.

These brownies start with the versatile Mom’s Brownie Mix which keeps on the pantry shelf for months so it’s ready whenever one feels the need for brownies. Cream cheese is in most refrigerators, and jam is on the pantry shelf. If you don’t like or don’t have orange marmalade, feel free to substitute your favorite jam in these brownies, but the slightly bitter orange goes especially well with the chocolate. I’ve found that these brownies are easier to cut into squares if they are chilled and the knife is run through hot water before cutting.

32 Brownie

5 cups Mom’s Brownie Mix
4 eggs
2 teaspoons vanilla

1 8 oz. package cream cheese
1/3 cup sugar
1 egg

1 cup orange marmalade

  1. Preheat oven to 350°. Spray a 1/4 sheet pan or 9" x 13" shallow baking dish with non-stick spray, line with parchment and spray the parchment.
  2. Mix the brownie mix, eggs, and vanilla until smooth. Spread evenly into the prepared pan.
  3. Mix the cream cheese sugar, and egg until smooth (I use the food processor). Drop spoonfuls over the surface of the brownie batter.
  4. Heat the marmalade until it is just warm and spoonable. Spoon dollops over the brownies. With a knife, marble the cream cheese and marmalade by running the knife through in several directions.
  5. Bake 45-55 minutes or until the center is set. Remove from the oven and let cool thoroughly before cutting into 32 bars.
