Pineapple Cheese Casserole Recipe
Looking for a side dish to serve with ham? The following Pineapple Cheese Casserole is the perfect side dish to serve on any holiday that ham (or pork for that matter) is the star. It is so good, however, that once you taste it, you’ll want to serve it more often. The Official Hancock Tasters loved this yummy side dish, and it was devoured quickly with no leftovers.

You can assemble this casserole ahead of time; just sprinkle on the buttered crumbs just before putting it in the oven. I found that the bullet blender insures that there are no lumps in the binding sauce, but you can whisk it together if a bullet blender isn't available.


8 Servings

1 21 oz. can crushed pineapple
1 21 oz. can pineapple chunks

1/3 cup sugar
5 tablespoons flour
6 tablespoons pineapple juice

1 cup grated cheddar cheese

1 package Ritz crackers, or Townhouse crackers, coarsely crushed
1/4 cup melted butter

  1. Preheat oven to 350°. Spray an 8" x 8" shallow glass baking dish with non-stick spray.
  2. Drain the pineapple and place it in a bowl. Reserve 6 tablespoons of the pineapple juice,
  3. Mix the sugar and flour; place it in a bullet blender and add the reserved pineapple juice. Blend (or whisk if a blender isn't available) until smooth and mix with the pineapple.
  4. Spread in the prepared baking dish. Sprinkle with the cheese.
  5. Toss the crackers and butter together; sprinkle over the cheese. Bake about 30 minutes or until the crackers are crisp and lightly browned.
