Slow Cooker Lemon Lava Cake Recipe
When the weather is hot, it’s nice to know that the slow cooker won’t heat up the house. Desserts made in the slow cooker are generally easy, so there is no excuse to skip dessert. The following Slow Cooker Lemon Lava Cake is easy to put together and is light and luscious. If you have a Casserole Crock you can make cakes and other desserts that look like they were baked in a 9” x 13” casserole dish (not to mention lasagna and other casseroles). If you are in the market for a good slow cooker, the shape of this one is perfect and you’ll wonder what you did without it. There are several brands, so you can choose which color and price is best for you.

1 1/2 cups self-rising flour
2/3 cup sugar
1/2 cup melted butter
1/2 cup half and half
zest of 1 lemon
1 teaspoon vanilla

2 15 oz. can lemon pie filling
1 12 oz. can evaporated milk
juice of 1 lemon

Powdered sugar for dusting

  1. Line a slow cooker with a large footprint – preferable not round, but oval - with foil allowing it to extend 2-3 inches over the sides of the slow cooker; spray with non-stick spray. (A Casserole Crock works best since it is the equivalent of a 9" x 13" dish, but you can use a 6 quart slow cooker if a Casserole crock isn't available.)
  2. Measure the self-rising flour and sugar into a fine strainer set over a mixing bowl and shake through.
  3. Add the melted butter, half and half, lemon zest, and vanilla; mix until smooth. Spread over the bottom of the slow cooker.
  4. Whisk together the lemon pie filling, evaporated milk, and lemon juice; spread evenly over the cake batter. Cover the crock, set the slow cooker to high, and let cook for 2-3 hours or until the center is soft, but set.
  5. Remove the lid to let any excess moisture evaporate.
  6. Lift the foil to remove the cake from the slow cooker, sprinkle with powdered sugar, and cut into serving size pieces. The cake can be served warm or at room temperature.

Note: if you prefer to serve the lava cake spooned like a pudding, you can omit the foil and just spray the crock with non-stick spray.
