Beef and Baby Bok Choy with Pan-Fried Noodles
Chinese stir-fries are often quick and healthy. They can easily be made at home, and sometimes are even better than what you get in a Chinese restaurant. Beef and Bok Choy with Pan-Fried Noodles is one such dish. Minimal chopping and using the air-fryer for the pan-fried noodles, make this an easy dish that can be made in 30-45 minutes. Although I prefer to use baby bok-choy, you can substitute regular bok-choy with good results; just use what is available at your grocery store.

6 Servings

1 pound beef petite sirloin steak, trimmed of any fat and sliced thin (or other steak such as top sirloin)
1 tablespoon cornstarch

Sauce:
1/4 cup honey
1/4 cup soy sauce
1/4 cup water
2 tablespoons Asian sesame oil
3 cloves garlic, finely minced
1 tablespoon fresh ginger, finely minced
1/2 teaspoon crushed red hot pepper
1 tablespoon cornstarch

2 tablespoons vegetable oil

1 large onion, quartered and sliced
1 pound baby bok choy, sliced

Pan-Fried Noodles:
17 ounces stir fry noodles, (such as yakisoba noodles) There will be 3 packets of noodles
1 tablespoon vegetable oil

2 tablespoons sesame seeds

  1. Toss the beef slices with the tablespoon cornstarch. Let sit while you make the sauce.
  2. Measure the sauce ingredients into a bullet blender and whizz until smooth; or, if a bullet blender isn't available, whisk together.
  3. Heat the vegetable oil in a large skillet or wok; add the beef and stir-fry until it is just cooked through.
  4. Add the onion and stir-fry until it begins to soften.
  5. Stir in the bok choy and the sauce. Cook until the bok choy is crisp tender and the sauce is thickened.
  6. Stir in the pan-fried noodles, sprinkle with sesame seeds and serve.
  7. Pan-Fried Noodles: Place the noodles from the 3 packets in a bowl. Add the oil and coat the noodles.
  8. Place the noodles in the basket of an air fryer set to 390°.
  9. Cook for 10 minutes, stirring every minute or two, until crisp.
