Chicken a la Charles (Sort of) Recipe
The coronation of a king or queen is huge in the UK, and most people want to know what is on the menu. Coronation Chicken was developed in 1953 for Queen Elizabeth’s coronation, and has been a mainstay in the UK ever since. Over the years, there have been dozens, maybe hundreds of variations of the recipe, and nowadays Coronation Chicken Deli Filler is the most popular sandwich filling around, and is found in every British grocery store. Now that Charles is the king, a British chef, James Cochran, recently had his recipe for Chicken a la Charles featured in a popular British magazine published by Waitrose, a popular grocery store chain. The recipe is flavored with curry and mango chutney, just like the original coronation chicken, but the following Chicken a la Charles (Sort of) has been adapted to an air fryer to make it an easy, and delicious weeknight dinner.

Spice Mix:
1 tablespoon mild curry powder
1/2 teaspoon cinnamon
1/2 teaspoon turmeric
1 1/2 teaspoons ground coriander
1 teaspoon salt

1 tablespoon olive oil

2 1/2 pounds boneless skinless chicken breast halves, trimmed of any fat or veins, cut into six serving size pieces

3 tablespoons mango chutney
1/4 cup sliced almonds, mixed with 1/4 teaspoon curry powder

1 sliced jalapeno pepper
Fresh parsley, for garnish

Dipping Sauce:
1 cup non-fat Greek Yogurt
1/3 cup mango chutney
Juice and zest of 1 lime

  1. Preheat air fryer to 390°. Spray the basket of an air fryer with non-stick spray.
  2. Mix the spice mix ingredients in a small bowl.
  3. Brush the chicken pieces with olive oil and dip into the spice mix. Place in a single layer in the basket.
  4. Set the air fryer for 20 minutes and place the basket of chicken in the air fryer.
  5. Meanwhile, mix the dipping sauce ingredients and set aside.
  6. After 16 minutes, brush the chicken pieces with the 3 tablespoons chutney and sprinkle with the almonds. Continue cooking until the chicken registers 135° on an instant read thermometer.
  7. Place the chicken on a serving platter, sprinkle with the jalapeno pepper slices, and parsley. Serve with the yogurt sauce.
