Shortcut Chilaquiles Brunch Bake Recipe
Chilaquiles have always been a favorite way to use up stale corn tortillas. In most recipes, tortillas are fried and covered with a spiced tomato sauce and cheese. Often shredded chicken or other meats are added, and the finished product is topped with sour cream and salsa. Needless to say, chilaquiles are delicious, and since they are usually served for breakfast, this Shortcut Chilaquiles Brunch Bake is perfect to add to your favorite brunch repertoire.

This easy dish can be made the night before and baked in the morning just as lucky eaters are getting ready to eat. Packaged tortilla chips make it unnecessary to fry the tortillas, making this very easy and quick to put together.


8 Servings

6 ounces tortilla chips, pressed down with your hands to crush them slightly
2 cups shredded cooked chicken, or substitute shredded beef or pork

Sauce:
1 15 oz. can tomatoes and chipotle chilies, or tomatoes and green chilies
1 to 2 chipotle chiles in adobo sauce
1/4 medium onion, chopped2
2 cloves garlic, finely minced
1 cup chicken broth

2 cups shredded cheddar jack cheese

8 eggs
Chopped parsley or cilantro, for garnish

  1. Preheat oven to 350°.
  2. Scatter the partially crushed tortilla chips over the bottom of a 9" x 13" baking dish.
  3. Sprinkle the chicken evenly over the chips.
  4. Place the tomatoes and chipotle chiles, chipotle chilies in adobo sauce, onion, and chicken broth in the blender and whizz until smooth. Pour over the chicken and tortilla chips. Sprinkle evenly with the cheese.
  5. Cover and refrigerate overnight (this isn't absolutely necessary but it saves time in the morning).
  6. Bake 30 minutes or until hot and bubbly.
  7. Remove from the oven, press a spoon into the mixture to make 8 deep indentations. Break an egg into each indentation.
  8. Return to the oven for 10-15 minutes or until the eggs are just set. Sprinkle with parsley or cilantro and serve.
