Chocolate Dipped Strawberry Brownies Recipe
You can substitute raspberries for the strawberries if you prefer; raspberries and chocolate are also a match made in heaven.
16 large brownies
3 cups Mom's Brownie Mix
1 teaspoon vanilla
2 cups semisweet chocolate, broken into chunks
1 cup heavy whipping cream
1 quart fresh strawberries, cored and halved
- Preheat oven to 350°. Spray a 7" x 11" glass baking dish with non-stick spray containing flour.
- Mix the brownie mix, eggs, and vanilla. Spread evenly into the prepared baking dish. Bake 25-30 minutes or until the center is just set and the sides pull away from the dish. Remove from the oven and cool thoroughly.
- Place the chocolate and whipping cream in a glass microwave-safe container. Microwave 3 minutes. Remove from the microwave and let sit 5 minutes. Whisk until thick and smooth.
- When the brownies are cool, spread a thin layer of the chocolate mixture over the surface of the brownies; arrange the strawberry halves cut side down over the chocolate. Pour the remaining chocolate mixture over the strawberries and use an offset spatula to smooth evenly. Refrigerate until the chocolate is set before cutting into 16 squares.
