Cutting up a cadaver is pretty gruesome, and the thought of cooking and eating those chunks is unimaginable. That’s why the following Cannibal's Creepy Cajun Cadaver Cuts are a perfect scary entrée to add to your Halloween BOO-ffet recipe repertoire. This recipe is actually for delicious creamy Cajun pork chops served over rice or pasta. The sauce is flavored with the “Cajun Trinity:” celery, green peppers, and onion, along with garlic, thyme, and Creole seasoning. It has a fair amount of heat, but you can control it by adding more or less hot peppers and Creole seasoning.

Although the name is frightening, the dish is amazing, and you’ll want to make it year round. Of course, you’ll want to call it Creamy Cajun Pork Chops at other times of the year.

8 Servings

1 tablespoon vegetable oil
3 pounds pork chops, bone in (more flavorful) or boneless, trimmed of outside fat

1 onion, finely chopped
1 green pepper, finely chopped
2 stalks celery, finely chopped
3 Serrano chile peppers, finely chopped, or jalapeno, (optional)
1 tablespoon fresh thyme
3 cloves garlic
2 tablespoons Cajun or Creole seasoning

1 cup water
1 tablespoon pork bouillon, or chicken if you can't find it

2 cups sour cream

hot cooked rice, or pasta

  1. Turn the Instant Pot to the sauté setting.
  2. Add the onion, green pepper, celery, Serrano peppers, if using, (use more or less according to preferred heat), thyme, garlic, and seasoning, and stir until slightly softened.
  3. Place the browned pork chops on the vegetables and add the water and bouillon.
  4. Cover the pot, set the valve to sealing, and set on Manual for 10 minutes.
  5. When the cycle has finished, release the pressure. Stir in the sour cream and serve over rice or pasta.
