If guests use their imagination, they may think that slices of chicken and different vegetables could resemble body parts. That’s why the following Sinister Satay with Bizarre Body Parts is a great dish to serve at your annual Halloween BOO-ffet. When it isn’t Halloween, this curry is quick enough to make on a weeknight in less than 30 minutes, at which time you may call it Instant Pot Chicken Satay Curry with Vegetables.

1/4 cup butter
1 medium onion, quartered and sliced
3 to 6 tablespoons Thai red curry paste, more for spicy; less for mild
1 tablespoon minced garlic
1/4 cup peanut butter
2 tablespoons soy sauce
2 tablespoons Thai fish sauce
3 tablespoons palm sugar, or brown sugar
2 14 oz. cans unsweetened coconut milk

2 pounds boneless skinless chicken breast halves, trimmed of any fat or veins, cut into 1/2 inch cubes

1 pound frozen stir-fry vegetables

hot cooked jasmine rice

  1. Turn the Instant Pot to the sauté setting.
  2. Melt the butter and add the onion. Stir the onion until softened.
  3. Add the curry paste, garlic, peanut butter, soy sauce, fish sauce, and palm sugar. Stir until the curry paste and peanut butter have dissolved.
  4. Stir in the coconut milk and bring to a boil.
  5. Stir in the chicken. Cover the pot, set the valve to sealing, and set to manual for 5 minutes.
  6. When the cycle has finished, release the pressure. Stir in the vegetables and serve over the hot rice.
