Eerie Eyeball Subs w/ Bloody Entrails Sauce Recipe
I don’t understand why eyeballs are so scary, but they are always featured at Halloween. Some are mangled; some are bloody, but they always seem to appear on Halloween BOO-ffet tables. These Eerie Eyeball Subs with Bloody Entrails Sauce are a great way to serve eyeballs, and these are so delicious, that guests will devour them quickly.

The entrails sauce is delicious on beef, pork or chicken if you want a change of pace.

12 Servings

Eyeballs:
2 medium zucchini
1 large carrot
1 small onion

1/4 cup cold milled flax
3/4 cup dry bread crumbs
2 eggs
2 teaspoons seasoned salt, your favorite (we like Lawry's)

80 stuffed green olives

Bloody Entrails Sauce:
1 tablespoon olive oil
1 small onion, halved and sliced into thin strips
1 green bell pepper, cored and cut into thin strips
1 red bell pepper, cored and cut into thin strips
1 to 3 jalapeno peppers, cored and cut into thin strips
2 cloves garlic, finely minced
1 8 oz. can tomato sauce
1 15 oz. can diced tomatoes and green chilies
2 cups catsup
1/2 teaspoon fennel seeds, crushed
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1 cup water

12 crusty French buns, or if making homemade buns, cut them into Halloween shapes


  1. Eyeballs: Preheat oven to 350°.
  2. Place the zucchini, carrots, and onion in the bowl of a food processor, and process, scraping the bowl once or twice, until finely chopped. Alternately, grate the vegetables or chop fine by hand.
  3. Transfer to a mixing bowl and add the flax, bread crumbs, eggs, and seasoning salt. Mix well.
  4. Add the ground beef and mix until well combined.
  5. Scoop tablespoon size balls (about 80) onto a broiler pan (so the fat runs down below). Bake 20-25 minutes or until cooked through. Remove from the oven.
  6. Entrails sauce: Heat the olive oil in a large skillet. Add the onions, stir for a minute or two, and add the peppers and garlic; stir over medium heat until they soften. Add the remaining ingredients, stir well, and simmer until thickened and fragrant.
  7. Add the eyeballs, olive side up, and simmer until heated through.
  8. Split the buns lengthwise in half. If you like toasted buns, broil until lightly browned. Spoon the eyeballs and sauce over the buns and serve.
