Instant Pot Spanish Soup Recipe
Nothing tastes better during a cold winter night than a hot bowls of soup. That’s why January is National Soup Month; most of us serve lots of soup during that time. The following Instant Pot Spanish Soup combines the delicious flavors of Spain, utilizing Spanish paprika, saffron, paella, chorizo sausage, Spanish olives and shrimp. This soup is very hearty, and especially good with freshly baked crusty bread.

This yummy soup tastes like it took hours to cook, but it’s made quickly in the Instant Pot. Leftovers freeze well.

18 Servings

1 pound uncured chorizo sausage
1 tablespoon olive oil
1 1/2 pounds boneless skinless chicken breast halves, cleaned, trimmed of all fat, and cut into 1/2 inch chunks

1 large onion, chopped
1 tablespoon Spanish paprika

5 ounces Saffron Rice Mix, (I use Mahatma Brand or Vigo)
1 14 oz. can diced tomatoes
1 14 oz. can diced tomatoes and green chilies
3/4 cup stuffed green olive, halved

6 cups chicken broth

1 pound small shrimp, peeled, deveined, and tails removed
1 16 ounce package frozen peas (Optional)


  1. Place the chorizo sausage in the Instant Pot. Add a cup of water and bring to a boil on the sauté setting. When the water has evaporated, remove the sausage and slice into 1/4 inch slices.
  2. Rinse out the pot and add the olive oil. Turn the pot to the sauté session and add the chicken chunks. Brown the chicken pieces quickly; remove from the pan and set aside.
  3. Add the onions and paprika; brown until slightly softened.
  4. Stir in the rice mix, tomatoes, and olives. Stir in the chorizo slices and chicken pieces. Add the chicken broth and stir well.
  5. Cover the pot, set the valve to sealing, and set to manual for 15 minutes. When the cycle has finished, let sit 15 minutes, then release the pressure.
  6. Stir in the shrimp (and peas if using); they will cook in the hot soup. When the shrimp are pink, serve with crusty bread.
