Stir-Fried Garlic and Ginger Bok Choy Recipe
Bok Choy is a versatile vegetable, and is a member of the same family as Napa cabbage and broccoli. It is used is dozens of Chinese dishes, and is delicious served as a side dish. Besides being yummy, it’s packed with nutrition. The following Stir-Fried Garlic and Ginger Bok Choy is stir-fried and goes well with Chinese dishes.

If I happen to have leftovers, I chop them up and add them to fried rice or noodle dishes. This dish is quick and easy. Bok Choy seems to have a lot of sand between the stalks, so I slice it, soak it in water, and rinse it several times, then drain it well. If you haven’t prepared this vegetable before, you are really missing out.

6 Servings

1 to 2 pounds Bok Choy, either full size or baby Bok Choy
2 tablespoons vegetable oil

1 tablespoon fresh ginger, finely minced
4 cloves garlic, coarsely chopped

1/2 teaspoon MSG, (optional)
1/2 teaspoon salt
1/4 teaspoon white pepper
1 1/2 teaspoons sesame oil

1 tablespoon cornstarch, dissolved in 3 tablespoons water

  1. Separate the stalks of Bok Choy and wash thoroughly and slice the stalks crosswise in 1" slices (If using baby Bok Choy, cut off the end and cut them lengthwise in quarters, then slice). Rinse again thoroughly and drain well.
  2. Heat the vegetable oil over medium heat in a large wok or frying pan. Add the ginger and garlic and let cook for a few seconds making sure the garlic doesn't brown.
  3. Add the Bok Choy; stir fry over high heat, making sure to coat it with the oil, garlic, and ginger. Sprinkle with the MSG, salt, white pepper, and sesame oil. Continue stir-frying until the thickest stalks are crisp tender. There will be a lot of liquid on the bottom of the wok; push the Bok Choy to the side and add the cornstarch mixture. Stir until slightly thickened. Serve hot.
