Instant Pot Tuscan Pork & Peppers Recipe
Anyone who has toured Italy, will agree that Tuscany is a beautiful region with amazing food. The flavors of Tuscany are similar to other Italian flavors, and definitely Mediterranean. The following Instant Pot Tuscan Pork and Peppers is a perfect example of Tuscan flavor, and this sauce goes well over pasta or with polenta. The sauce can be made ahead, and the flavors will meld to be even more delicious. Since it’s made in the Instant Pot, it’s easy. There is no need to chop ingredients since the onions and peppers are from a frozen package of pepper stir fry which saves time and effort. The orange marmalade adds a subtle orange nuance without having to zest an orange. Almost all of the spices are found on spice racks in most kitchens, so it’s quick to put together.

12 Servings

2 pounds pork loin
1 tablespoon olive oil

1/2 cup red wine
1 tablespoon granular pork bouillon, or use chicken
3 cloves garlic, finely minced

2 15 oz. can stewed tomatoes, or diced tomatoes, blended
1 20 oz. can spaghetti sauce, your favorite brand
1/2 cup orange marmalade
1 teaspoon fennel seeds
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon crushed red hot pepper, (optional)
2 16 oz. packages frozen pepper stir fry

  1. Trim all fat from the pork loin and cut it into 1/2" cubes.
  2. Turn the Instant Pot to the sauté setting, add the olive oil, and toss in the pork cubes. Let them cook, stirring often, until they are white.
  3. Add the wine and bouillon; stir, and let boil 2-3 minutes.
  4. Add the remaining ingredients. Cover the pot, set the valve to sealing, and set on manual for 20 minutes>.
  5. When the cycle has finished, release the pressure. Stir and serve over pasta.
